Mint Thins

Day 12

These are absolutely delicious!  I used them for a cookie exchange one year.



  • 1 pkg (8 squares) semi-sweet Chocolate
  • 1/4 tsp peppermint extract
  • 36 Ritz crackers
  • 1 peppermint candy cane, crushed


Microwave chocolate in small microwaveable bowl as directed on package.  Stir until completely melted.  Blend in extract.

Dip crackers in melted chocolate, completely coating crackers with chocolate.  Carefully scrape off excess chocolate.  Place on wax paper-covered baking sheets; sprinkle with candy.

Refrigerate 30 min. or until chocolate is firm.

    Hey, what do i use to dip the crackers? Tongs?

    I just used a spoon to turn the cracker over and to scrape off excess chocolate.
